The Mudaliar community from the South Arcot district of Tamil Nadu have a long and delicious culinary tradition. The Mudaliars of Tamil Nadu were the face of the common man and were known for their love for brinjal and their farming innovations. Mudaliar cuisine is among the list of dying cuisines in India. Their cuisine is distinct for its style of preparations. It is cooked in traditional vessels like kal chatti (dishes retain a special taste if cooked in this) and copper vessels. The Mudaliar palate is less spicy compared to the Chettiyars. What makes Mudaliar cuisine unique is it's simplicity and ingredients which are locally sourced. The flavours are beautifully complex and all comes from the love of spices, local fruits and vegetables.
