Aashna and Utsow's neighbourhood or '8 Mile village' is an interesting place as it is at the crossroad of a small farming hamlet which is slowly integrating with the modern economy. There are shops that dot the main road with the choicest offering of local cuisine and indigenous fruits and vegetables (locally produced) and there are trails that take you away from the main road and introduce you to happy-go-lucky villagers who would warmly welcome you into their humble abodes for a cup of tea. Tieedi is a permaculture forest garden set up by Aashna and Utsow with a goal of regenerative agriculture and earthy dwellings hand-crafted with local skills and resources. As part of the Authenticook experience, the guests would be taken for a forest walk for one hour where the hosts will introduce the concept of permaculture to them and showcase their herb spirals, linked-key hole beds and their very own five-step composting process where they up-cycle the entire organic waste generated in the 8 Mile village. Our hosts will also showcase their Earthy Dwellings and introduce you to the concept of Forganic Farming (Foraging and Organic farming). Depending upon the season the guests may be able to even forage for the vegetables, herbs that would be used in the meal that would be cooked for them. Aashna and Utsow invite you to their forest garden and home to experience the rural way of life in Darjeeling.
