The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. Due to the dependence on the river Ganga and fresh water ponds and lakes, the fresh water fishes and shrimps are must, in regular as well as festive food. There is also an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. There is a custom to sacrifice a male goat in front of Goddess Kali all over Bengal, hence mutton dishes have been very popular. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine. Indrani gives you a taste of the variety prepared during the festivals, all learnt from her mother and grandmother!
